Thermostat is not that old (about a year) so I replaced the PCV valve which was toast (and quite a pain in the arse). At idle or even low speeds (45-50) it’s fine. But as speed increases the temp goes up.

The force of the coolant flowing through the cooling system at highway speeds, especially for the length of time to drive 250 miles, should have forced any air pockets into the top of the radiator. Then as the engine cools it'll draw coolant back into the engine from the overflow bottle., 3.8L JK automatics have woefully inadequate transmission cooling capacity. The cooler is at the bottom of the A/C condenser, behind the front bumper.
